Sugar Cookie Show-and-Tell: Fiesta!

I know that when a fellow baker asks for cookies, I have to step up my game.  Ms. T has ordered from me several times for different events, and originally asked for margaritas for a fiesta themed party for a friend.  Ive been dying for a reason to do a piñata cookie and cactus cookie, so I asked If I could expand the scope - thankfully she was open to suggestions!  T makes the MOST AMAZING coconut macaroons, so I know my cookies not only must look good, but have to taste good too...hope they fit the bill!  Ole'!

Sugar Cookie Show-and-Tell: We all scream for ice cream (cookies)

Im not going to lie, I like ice cream better than cookies.  If I made ice cream for a living I'd probably eat the profits, so I'll stick with cookies.  So I combined the two for this cute ice cream platter, those little sundaes are my favorites!
